Strawberry Mint Butterhead Salad with Honey-Lime Vinaigrette

This refreshing Strawberry Mint Butterhead Salad combines tender butterhead lettuce, juicy strawberries, and fragrant mint for a vibrant spring or summer dish. Tossed in a light honey-lime vinaigrette and optionally topped with crumbled cheese and toasted nuts, it’s a perfect balance of sweet, tangy, and crisp — ideal as a side or light lunch.

Ingredients

  • 1 head butterhead lettuce, torn into bite-sized pieces

  • 1 cup fresh strawberries, hulled and sliced

  • A handful of fresh mint leaves, thinly sliced or torn

  • ¼ cup crumbled feta or goat cheese (optional)

  • ¼ cup chopped toasted pecans or almonds (optional)

  • For the Dressing

    • 2 tablespoons fresh lime juice

    • 1 tablespoon honey or maple syrup

    • 3 tablespoons olive oil

    • Pinch of salt and freshly ground pepper

Directions

  1. Prepare the salad:
In a large bowl, gently toss together the butterhead lettuce, sliced strawberries, and mint leaves.

  2. Make the vinaigrette:
In a small bowl or jar, whisk together lime juice, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking until the dressing is emulsified.

  3. Assemble and serve:
Drizzle the vinaigrette over the salad just before serving. Toss gently to coat. Top with cheese and nuts if using.

    Tips:

    • Add grilled chicken or quinoa to make it a heartier meal.

    • Swap lime for lemon if that’s what you have.

    • For extra flair, top with a few edible flowers like nasturtiums or pansies.
